Chicken Kadai(Balti)


A popular North Indian and Pakistani recipe made with chicken, and freshly grounded spices. Kadai Chicken literally means cooking in kadai(wok) and to cook this dish only one utensil is used.

1 large onion (pureed)
Heaped teaspoon of ginger & garlic paste
Half teaspoon of cumin, garam masala, turmeric and paprika
Chilli & Salt to taste
300g of diced chicken
3 heaped tablespoons of tinned tomato
1 heaped teaspoon of dried methi (fenugreek leaf)
Chopped coriander to garnish


Add oil to a pan
Add the dry spices, increase temp of oil to ensure the spices begin to fry without burning
Add ginger and garlic paste
Cook gently for 5 min
Add the onion
Continue for another 5-10 min adding water if necessary
Then add the chicken
Continue for further 15min until chicken is cooked
Add seasoning to taste
Add methi (fenugreek leaf)
Garnish with coriander
